Pecan Cakes

I love this cupcake!  I like to eat it with caramel, everyone else in my family likes them plain.  Whenever I make these, I’m always asked for the recipe, so here goes!)

I got the recipe from: (Pampered Chef calls them Sticky Caramel Mini Cakes)

SEASON’S BEST RECIPE COLLECTION fall/ Winter 2006 (this is such a good collection, there are so many I still haven’t tried but really want to and a couple that I make All. The. Time!

Ingredients

3/4 c buter (not margarine)

1/2 c toasted pecans (I usually use more!)  😉

1 and 1/2 c flour

1 tsp baking powder

1/4 tsp salt

1 and 1/4 c packed brown sugar

2 eggs

1/2 tsp double strength vanilla (or I just use 1 tsp of regular)

Steps

  1. preheat oven to 350 degrees
  2. Spray Silicone Cupcake Pan and set aside
  3. microwave butter 30 seconds at a time until melted, set aside
  4. combine chopped up pecans, flour, baking powder and salt, mix well and set aside
  5. add brown sugar, eggs and vanilla to the butter and whisk until smooth
  6. add butter mixture to flour mixture and stir until just combined
  7. using a large scoop, place a level scoop of batter into each well of pan
  8. bake 18-22 minutes or until golden brown
  9. remove from the oven and let cakes cool for 5 minutes in the pan
  10. Enjoy!

These are so good.  I’ve bought a few other festive silicone cake pans for different occasions!

I have learned not to make more than two batches at a time!

Coconut Oil

Since I’ve been researching nutrition, I came across how good coconut oil is for you.

I first used it just for cooking.

 

 

 

Then I came across these books:

Coconut Oil For Hair Care and

These books had good information in them, most of it I already knew, so I was glad that I was able to download them for free!  🙂

How I’ve Used It

After reading the books I started putting the coconut oil on my foot where I’ve had a rash or something.  I’d been to the doctor about it and since I’ve been nursing or pregnant, the only cream they could give me cost over $100 with insurance!  It took a week or two before I noticed any difference, but it did make a difference.  First it took away the redness.  Then, over time, it took away the itchiness.  For about two months I had to put the oil on everyday or the itchiness would return.  Now I only need to put it on a couple of times a week!  🙂

I also put it on my belly to see if it would do anything to my stretch marks (I was pregnant at the time).  Over a week or so, I noticed that they were less shiny.  Now that I’m not pregnant anymore, I can still see my stretch marks, but they are less noticeable!  🙂

Since I had such a good experience with my foot and stretch marks, I decided to look into coconut oil beauty products!  Tropical Traditions & Vitacost are the places I looked!  I have not tried the beauty/skin care products from Tropical Traditions, but what I would like to try is:

I have tried a few products from Vitacost and I have loved them!  (Sorry I cannot find direct, affiliate product links).  When my mom was visiting, she tried them and also loved them!
