Harvest Chicken Salad

This is one of my favorite salads!  I got it from the Pampered Chef Fall/Winter 2006 Recipe Collection.

 

Dressing

2 oranges

1/3 C mayo (I use Paleo mayo)

2 TBS of stone-ground mustard (I can’t stand it with that much, so I put in 3/4 to 1 tsp)

2 tsp sugar (I either omit this, or add 1 tsp of honey)

1 small garlic clove, pressed

 

Salad

6 oz fresh baby spinach leaves

2 C diced chicken

1 C diced celery

2 medium Red Delicious apples

1/2 C chopped red onion

3/4 C dried cranberries

1/2 cup toasted pecan pieces

 

Directions

  1. zest oranges to get 2 tsp of zest
  2. juice oranges for 1/2 C of orange juice
  3. combine zest, juice and all other dressing ingredients together in a small bowl
  4. place spinach in the bottom of a bowl and add other ingredients (I don’t measure the salad part, I just toss in the amount that looks good)
  5. drizzle with the dressing
  6. Enjoy!  🙂

I love this salad, it really is one of my favorites!  It was very simple to make Paleo.  The last time I had it, I used leftover Honey Chicken from dinner and it was A-Maze-Ing!  😉
