Buttermilk Chicken

I use this for two different types of chicken dinners.  Whenever I buy buttermilk, I always put these freezer kits together because so that I don’t have to throw away any buttermilk!  It also makes for quicker dinner preparation!  (Check out Money Saving Mom for freezer day ideas & recipes!)  All of my recipes are approximate, I usually do not measure things out!

I marinate 4 chicken breasts in approximately 1 cup of buttermilk, 2 TBS of Dijon mustard, and I season it with Nature’s Seasoning (or just salt and pepper).  Put all ingredients into a Freezer bag, label it and put it in the freezer.

Parmesan Chicken

I mix 3/4 cup of Panko bread crumbs, 3/4 cup grated Parmesan cheese, & 2 TBS of Italian Seasoning or parsley flakes in a resealable bag.

I put one chicken breast in the bag and coat it with the bread crumb mixture, then place it in a greased baking dish.

Continue above step for all pieces of chicken.  I then spoon the rest of the bread crumb mixture on all of the tops of the chicken.

Spray the tops of the chicken with cooking spray and cook at 350 degrees for 45 to 55 minutes.  I love this with a side of asparagus or on top of pasta with Alfredo sauce!

French Fried Onion Chicken

Put 1 to 1.5 cups of French Fried Onion (French’s) in a resealable bag.  Crush up the fried onions (I just let my kids use a rolling pin to crush them up!)

Take a piece of the buttermilk chicken, place it in the bag and cover it with the onions, place the chicken on a greased baking dish. Repeat for all chicken pieces.  Spoon the excess mixture on top of the chicken pieces.

Spray the tops of the chicken with cooking spray and cook at 350 degrees for 45 to 55 minutes.
