Goddess Salad

Sorry I realized almost at the last minute that I needed to take a picture! 😉

I had the kids help me make this salad and they couldn’t get enough.  Even one of my sons (who’s a struggle to get him to eat veggies) asked for thirds!  I got this recipe from a friend at my Ladie’s Group.

Ingredients:

2 cups loosely packed fresh kale, torn into bite-sized pieces

2 cups loosely packed baby spinach, torn into bite-sized pieces

1 cup shredded cabbage or broccoli-slaw mix

6 strawberries, sliced

1 large carrot, peeled and sliced

1/2 cup blueberries

1/3 cucumber, peeled, seeded & sliced (we didn’t have one, so we didn’t add this)

3/4 cup raspberries

Raspberry vinaigrette (used the first three ingredients from this recipe)

 

Directions

  1. Massage kale on a large bowl for 1-2 minutes, or until broken down and tender.  Combine with spinach and cabbage.
  2. Top with remaining ingredients, then drizzle with salad dressing.
  3. Enjoy!  🙂
