Diet Update
I haven’t stuck to the diet as strictly as I have been. I’ve noticed I am a little more tired, I get bloated very quickly, I have a harder time falling asleep at night and my BMs are different. I’ve also noticed that I’ve needed more sleep lately, however, I’m guessing that all of this isn’t just because of my diet, I think it’s also everything else we have going on in our lives right now. I did start soaking oatmeal for the kids and they actually really like it (I only use 1 TBS of lemon juice). They like adding in raisins and maple syrup (I also like to add some pecans)! I tried making some Cinnamon Swirl bread with soaked flour and it didn’t turn out perfect. The dough was too sticky, however, the bread tastes ok. My kids are eating it just fine, I think I just need to acquire a taste for it. After we move, I’m going to look at making bread with soaked flour.
I have lost right around 9 pounds. I’m getting frustrated that I’m not gaining muscle very fast, but I think I’m just not being patient enough, not to mention, I’ve only been able to make it to lift weights 2x/week! Hopefully after we get settled, I can get back to this a little more!
