1.5 to 2 lbs of ground beef
1 box of stuffing
1 cup of water or broth
2 eggs
2 TBS BBQ sauce
frozen spinach, approximately 6 ounces, defrosted and water rung out (put in a strainer and use a paper towel to press the water out of it)
1 medium onion, chopped
salt, pepper, parsley (to taste)
Combine all items and mix well. Spray a muffin pan, fill the muffin pan with meat mixture (I use an ice cream scoop/muffin scoop) and cook at 400 degrees for approximately 25-30 minutes!

Yum! I;m not a huge fan of barbecue sauce, but otherwise, this recipe is right up my alley.
I’m stopping by from the 100 Comments on My Blog event. I don’t have a whole lot of parenting beliefs because I don’t have kids. I do eat food, though.
I’ve seen it made with salsa instead of the BBQ sauce too! 🙂
