Taco Soup

This is super quick and easy!

 

Ingredients

ground beef or turkey

8 oz of salsa

can of corn (UN-drained)

shredded cheese

 

Optional:

canned beans

beef broth

cilantro

sour cream

 

Directions:

  1. brown ground beef/turkey (I usually brown up a bunch at one time, so if you already have some in the fridge, this is super quick) over medium high heat on stove
  2. drain grease
  3. pour salsa & corn (beans) into pot, if you want it soupier, add water or beef broth (I will sometimes put leftover re-fried beans in)
  4. bring to a simmer
  5. add in cheese and let the cheese melt
  6. serve hot (I garnish with cheese, sour cream, and cilantro!)
