Apple Pie
My mother-in-law makes a wonderful apple pie. After being married for over 7 years, I finally had enough nerve to make one from scratch, didn’t turn out half bad, especially for a first time.
Here is her recipe:
Pie Crust
double crust
2 cups of flour
1 tsp salt
2/3 Crisco (yes, it has to be Crisco!) 😉
5-7 TBS of ice water
Cut shortening , salt, & flour together with pastry blender till the size of small peas.
Sprinkle water, 1 TBS at a time over mixture. Gently toss with a fork.
Repeat until all mositened.
Form into two balls.
Roll out on a floured surface.
Filling
6-8 Granny Smith apples; pared, cored and thinly sliced
3/4 to 1 cup of sugar
dash of salt
2 TBS flour
2 TBS butter
1/2 to 1 tsp ground cinnamon (we like to use Pampered Chef’s Sweet Cinnamon Sprinkle!)
dash of nutmeg
pastry for 2 crust
9 in pie plate (I’d suggest a deep dish!)
Combine sugar, flour, spices, & salt.
Mix with apples.
Line pie plate with pastry.
Fill with apple mixture.
Dot with butter.
Adjust top crust, cutting slits, then seal. (We like to sprinkle cinnamon sugar or the Cinnamon Sprinkle on the top crust also!) 😉
Bake at 400 degrees for 50 minutes.
